Sorrowful Sourdough

I think I haven’t developed a madly passionate relationship with my levain. I often read here and there, about an incredible deep connection, that some people give it a name, how much they love seeing it grow and enjoying its smell. For me, neither its sour perfume, or its lumpy texture or its bland yellow color make me want to over-appreciate it. We keep a very professional relationship: it does its job and I do mine.

Je n’ai pas particulièrement développé une relation follement passionnée avec mon levain. Je lis souvent par-ci et là, que c’est vraiment incroyable, qu’on peut même lui donner un nom, qu’on aime le voir grandir et qu’on s’amuse à le sentir. Pour moi, ni son parfum aigre, ni sa texture grumeleuse ou sa couleur jaune fade ne me donnent envie de le sur-apprécier. On garde une relation très professionnelle : il fait son boulot, je fais le mien.
